Restaurants and bars succeed because of a recipe of passion, good luck, market conditions and basil (well, not always basil). The quantity of each isn’t static. They vary from project to project, and doing the hard work to discover the nuance is what gives a place the best chance for success. Design, lighting, art, music, service, branding, style each need to be given weight and scrutiny.
